Breakfast by Penny at Inn Victoria
Okemo Valley's Best Romantic Bed and Breakfast, Inn Victoria from Chester Vermont, is the home of the finest gourmet breakfast in Vermont. Guests of Inn Victoria have no disagreement with this statement. In fact, so many of our guests have asked for recipes that Penny and I agreed to host one blog per week on the topic of food.... food created & served at Inn Victoria.
Penny is known for creating breakfast dreams and simply calling them whatever comes to mind. Take for example, this beautiful wafer looking sandwich of berries and yogurt ....what shall we call it? Well lets take a look at what its made of and how to go about it.
1. Bake wantons to a light crisp and allow them to cool on a cooling wire rack
2. Mix vanilla bean Greek yogurt with lemon curd to a light touch of lemon flavor without altering
the rich texture of the yogurt.
3. Place one wanton in the center of the plate
4. Dab a bit of yogurt onto the wanton
5. Place five ripe, juicy berries of your choosing onto the yogurt
6. Dab some more yogurt onto the berries
7. Gently place the top wonton on the top of the yogurt and berries
8. Sprinkle your favorite sweetener; cocoa, maple sugar, confectionery sugar...
9. Add a mint leaf for additional charm, scent and taste
Don't try to crack through the wanton with a knife or fork....just pick up the top wafer with your fingers and take a bite...go for it!
Some might cal this a breakfast wafer, some may call it dream # 2 because it is course # 2 in a three course gourmet breakfast. Until a blog reader comes up with a better name (and I hope someone does)...I'll simply call it Penny's breakfast concoction #9.

William Austin Antiques Creates a Soda Fountain in the Store
Where else can one go these days to enjoy a good old fashioned soda fountain? In Chester Vermont, of course! Penny and I were taking a break from the work at Inn Victoria, a Chester Vermont Bed and Breakfast, and decided to check out what the buzz was in town about the new soda fountain at William Austin Antiques....just a quarter mile down the road from Inn Victoria.
We love wondering through the store, and more often than not we walk out with some new piece of Victorian furniture for the the Inn. This time we were greeted by the owner, Bill and his manager Jim, all adorn with a soda fountain hat, a big smile and offering a giant apple pie from Mountain Creamery in Woodstock, Vermont. Bill has an arrangement with Mountain Creamery to sell their yummy ice cream and apple pies. What a treat!
Take a close look at these photos; the Coca Cola signs, the old ice cream scooper, the Penny Candy sign, this will take you back a few years! Bill had all the pieces, bar stools, counter, mixers etc scattered throughout his store, for sale. His thought was to put them all together and create the small soda fountain. Several of our guests have enjoyed the experience and LOVE it!
The next time you are in Chester, Vermont...give William Austen Antiques a try! This is a first class antique emporium located in a quaint, picturesque New England town. Saltbox in the Country Blogs Inn Victoria
Inn Victoria, a Romantic Vermont Bed and Breakfast, was the subject of a friend's blog several weeks ago. Actually, one of our guests kept taking lots and lots of photographs and was oohing and ahing the whole time. Julie was obviously having a fun time! It turns out that Julie of Saltbox Treasures loves to travel and take lots of photographs, place them in a very nice blog and share her experiences with a great number of followers.

American Doll High Tea Package is Recognized by I Love Inns
In 2009, Yankee Magazine rated Inn Victoria, a Chester Vermont Bed and Breakfast, Vermont's Best rated Romantic Bed and Breakfast. In 2010 Inn Victoria was awarded the distinction of Excellence by Trip Advisor.
No doubt Inn Victoria is being recognized by major rating organizations and publications because of its ability to charm and draw guests into a state of relaxation. The augment of High Tea in May of 2010 has been a natural draw for guests traveling to Vermont from around the country.
Put all of this together and wow!...we find that"I love Inns" is paying attention and picks up on a special package we have for the spring. Incredible!....they have placed it in their monthly newsletter. One can't buy that sort of advertising, it is so special and effective! Earlier this week, "I Love Inns" released a digital newsletter posting the "American Doll High Tea Package" for late April and early June. Take a look at the package on Inn Victoria's web site.

Inn Victoria, a Bed and Breakfast Near Okemo Vermont, Honors SKI Magazine Article
Earlier this week I picked up a copy of January's SKI magazine and was not surprised to read about Inn Victoria's partner, Okemo Mountain Resort, in the news again; this time with praises from author Joe Cutts and photography by Cal Crary. An eleven page story of Okemo Mountain Resort's BEST it has to offer provides an impressive article to say the least. The mountain and its splendid attributes is of course the highlight, but then author Cutts goes on to showcase the surrounding towns of Chester, Ludlow and more, the restaurants, shops etc.
Without question, this article is a feather in the cap, and an honor for the owners of Okemo Mountain Resort. As a small business owner nearby the resort, such marketing opportunities for Okemo are also a blessing to us. We have many guests visit our Bed and Breakfast, Inn Victoria in Chester Vermont, who tell us that the conditions are consistently better than any Eastern mountain resort they have skied. These words are repeated in Cutt's article of Okemo, going on to praise the snow making and grooming:
